One of our favourite pastas, it is made with aubergine, and we consider ourselves unconditional fans of this vegetable... It is a typical Sicilian dish and nowadays, it is a pasta dish that we can practically find in any Italian restaurant. It is made with short pasta and aubergine previously cut and cooked, we add salted ricotta (this cheese is not always easy to find in Spain) and a good tomato sauce.
