Salmorejo is the Cordoba version of gazpacho, we follow our friend Yoli's recipe, to make it healthier. With how good the tomatoes are, it's worth it. We serve it with ham and laminated egg.
Ingredients: tomato, olive oil, garlic, bread (wheat flour), white wine vinegar, red pepper, onion.
Topping: crispy ham shavings and grated egg.
