Chicken Katsu is a Japanese recipe with different Japanese, Korean, and Hawaiian variations. It consists of a breaded and fried chicken breast, very crispy, served with Japanese mayonnaise sauce for dipping. We created our own version by grilling it while keeping the crispy crust. It is accompanied by chickpea hummus, leek, and carrot.
We use the traditional recipe, the one we have always used. A fresh, summery starter that goes down very well (light and soft version). It also comes with crunchy croutons in a separate bag.
This rice with mushrooms is a rather dry rice, although we add more stock to give it a mellow texture. Rice with seasonal ingredients, seasoned as always.
Just to tell you that we make the traditional Italian recipe, with onion, bacon and egg yolk, but without cream. We add a little parmesan cheese... sensational!
