Vegan Empedrat
BEnsaladaEmpedrat is a traditional dish of Catalan cuisine whose name refers to its appearance, as it resembles a plate of pebbles. It is a very complete dietary dish and can be eaten hot or cold. In some areas empedrat is also made with chickpeas. Our empedrat is made with beans, tomato, green and red bell pepper mix.
Ingredients: white beans, tomato, red bell pepper, green bell pepper, red onion, parsley, spinach, vegan parsley mayonnaise (for garnish).
