Pasta Alla Norma
DPastaOne of our favorite pastas, it is made with eggplant and we consider ourselves unconditional fans of this vegetable... It is a typical Sicilian dish and nowadays it is a pasta dish that we can practically find in any Italian restaurant. It is made with short pasta and eggplant previously cut and cooked, we add salted ricotta (this cheese is not always easy to find in Spain) and a good tomato sauce.
Ingredients: pasta, crushed tomato, eggplant, ricotta cheese, garlic, basil, oil and salt.
