Salmorejo is the Cordoba version of gazpacho, we follow our friend Yoli's recipe, to make it healthier. With how good the tomatoes are, it's worth it. We serve it with ham and laminated egg.
Ingredients: tomato, olive oil, garlic, bread (wheat flour), white wine vinegar, red pepper, onion.
Topping: crispy ham shavings and grated egg.

Another Italian recipe that we adapted to our taste, with the meat very rare and adding tuna sauce and capers. We accompanied it with courgette, aubergine and peas mixed with parsley.
Ingredients: beef, capers, onion, anchovy, tuna, high oleic oil, yogurt, garlic, yogurt, oregano, zucchini, eggplant and peas.
