One of our favorite pastas, it goes with eggplant and we consider ourselves unconditional fans of this vegetable... Typical Sicilian preparation and nowadays it is a pasta dish that we can practically find in any Italian restaurant. It is made with short pasta and with chopped and previously cooked eggplant. We add salted ricotta (this cheese is not always easy to find in Spain) and a good tomato sauce.
