This recipe is inspired by a restaurant in NYC, a chain called Chipotle that specialises in Tex-Mex food, making burritos and tacos in a bowl. You choose the type of rice you want, the beans, the type of meat (chicken, beef, pork and even tofu) and one of their sauces (sour cream, cheese, guacamole). We liked the concept so much that we've decided to launch our version of Chipotle Chicken.

It's a burrito bowl-style, Mexican-spiced marinated chicken, super-small marinated chopped tomato, onion, cilantro, beans, avocado, pico de gallo, sautéed rice and salsita.
